I was so busy these days, I couldn't reach my laptop to post the recipes...
But it doesn't mean that I haven't done a thing. In the contrary! :D
I have at least 6 dishes to post to You. And Voilá!
Here's my first main course post to this page, and to be loyal to our national tastes, I decided to start with the most famous soup of Hungary, the Gulyás.
Yes, it's a spicy soup with the Hungarian red paprika and it's not a stew. :)
To reach the original taste we have to make it in a cauldron. We made this with a bunch of friends, it's so fun cooking together in the garden. :)
The recipe is enough for at least 12 people! :D
Ingredients:
- 2 big onions
- 1,5 kg = 3 pound 5 ounces of pork chuck or shin of beef
- oil
- 4-5 l = 1 gallon of water
- 4 pieces of carrots
- 5 pieces of paprikas + 1 hot paprika
- 1 piece of turnip
- 1,5 kg= 3 pound 5 ounces of potatoes
- some cloves of garlic
- spices: red paprika/red peppers, pepper, salt, cumin, parsley
- flour (1 cup)
- eggs (2)
- a little water
- salt
Preparation:
1. Firstly cut the onions to small cubes.
2. Prepare the meet, wash it well, then cut it to cubes as well, cut out the bones.
Prepare the vegetables as well, peel them, and cut them to smaller pieces.
3. Fry the onions in some oil in the cauldron, then add the meet as well.
4. When the meet becomes lighter a bit pour 3-4 tbsp of red paprika, and 2 tbsp of salt to it, and pour 2 l of water to it and cover it with a lid.
5. Boil it up, and cook it for about 1 hour.
6. Add the vegetables as well, with 2-3 l of water.
7. You can add the spices to it the same time, salt, paprika, cumin, and peppers, the way You like it.
8. For the noodles, mix some flour with 2 eggs, a pinch of salt and add a little water to it to make a knead-able pastry ball.
9. When the meet and the vegetables are soft (in around 1 hour) You can add the parsley to the soup.
10. And from the pastry, make some smaller noodle balls and place them to the soup. ( we were sitting around the cauldron, and thrown the noodles one by one, it was great fun) When they become softer (in 20-30 minutes), the soup is ready, to serve it.
If You don't want to make noodles, you should serve it with bread. :)
