Cottage cheese Cake with nectarine


Hi Dears,
I have 2 months till my final exam at my pastry school, and I still have some pastries, cakes, and creams to practice.
Last week I baked two of them, neros (which are little soft biscuits filled with jam - you can have the recipe in my following post) and this Cottage cheese cake. 
We celebrated my fiancé's grandma's Name Day as well, so the cake was my gift to her. :)
I am short in time as now I have a full time job, and at home we are under a home renovation. 
If I had more time I would cover the cake side with cream and maybe cover it with almonds, it would make the cake even more beautiful and would give a finished look. Anyway, I didn't bake it, just to look at it, we cut it right away, I took it from the fridge, and believe me it was tasty! In this hot summer it was great refreshment as we cooled it for 3 hours in the fridge.

Confectionery studies - 5th week


Hi Dears, 
Last week, it was a really busy course in school.
At the same time we learnt 6 different pastries to bake.
It can be tough to look each groups, while we are baking our own pastry in our group. Usually that's why I bake at home something else to learn at least 2 of them properly. :) 
This time we have baked mostly mid-morning, or afternoon pastries.

Heaven cake with marscapone, cottage cheese and strawberries


Hi Dears! 
Do You have a dessert custom for Easter
Since it will be next week, I'm thinking about it for a while, what to bake/make for dessert. 
Here the usual dishes are boiled eggs with ham and milk loaf. 
But milk loaf is not a dessert in my opinion, it's a really tasty bread-like pastry, which happens to be sweet. We eat it as a side-dish with the ham, and sometimes with jam or with the nice company of honey and butter. 
Usually I bake a cake, or funny, fruity muffins for the occasion. Like my Bunny cake which I made 2 years ago. 
So if You have any suggestion, please leave a comment here. :) 

But now I brought a no-bake cake, that I made for a family gathering (again). 
It was a huge success, with the light creamy marscapone and cottage cheese.
 It was really like a tasty cloud from Heaven, and the strawberries were like the angels sitting perfectly on the cotton wool-like-cake.

For the base of the cake I used diabetic crushed cookies, just because I had them, but any cookies would make it perfect. :)

Cottage Cheese Biscuits "Túrós pogácsa"

Hi Dears! :)
I hope You are fine, and You can enjoy the beautiful flowers around You.
 I got so pretty tulips, roses, bromeliads for women's day that our kitchen is like a fairyland now. :D
 (A lot of thanks for the gentlemen of the family and friends for that. :D) 
- I will make a photo of  them tomorrow I promise, and post it on Facebook, because now it's evening and it's too dark. -

Also, I have an even BIGGER milestone to announce!
I had my Graduation on Saturday! YAY! I made it. 3 and a half year of full of studying.
 You know, tourism and catering.  I'm now an Economist. :) 
Sounds so clever. :D

The only thing I'd like now is a great job. Cross fingers for me, pls. :D

OK, let's speak about this biscuit, it's one of my usual recipe for salty snack. The cottage cheese makes it even more soft, so I recommend using it! :)

CheeseCake with Greengage jam


Hi! :) 
Spring is nearly here, Yay! :D 
I like the beautiful colors and the fragrances of spring, that's why I made something as sparkling and colorful as the season will be. (Hopefully soon :))

So, about this cake. This is my first ever Cheese Cake, in the mean of the American Cheese Cake.

 I realised that there are some very differences in the dairy products in the two countries: there are no cream cheeses here in Hungary than in the US that they usually use for this. (If we do have, it must be in just a few and rare stores) However, it's hard to explain what we got instead. We have for example 'túró', which I usually call cottage cheese/curd/or quark. 
But it's not the same, just similar.
Or we have "tejföl", which I call sour cream/cream fraiche, but we use these English words to explain more products in the same time, however these are different, and  has more words for them in Hungarian. Like "tejszín" is a different product, and possibly it is like heavy sour cream... ? 

So, back to the cake, to create the American type of cheese, I used cottage cheese (túró) with plain cream cheese

And to decorate the top I used my self-made jam, that I made in the summer. :D

Cottage Cheese and Biscuit Balls

Hello! :) Do You like autumn?

The school has been started already. I remember I loved this time when I was in high school, that I could meet again with all my friends. :)

But for now, that I am working, it's not too different from summer, however, I do prefer this season. The nature is beautiful and we can dress up in great clothes, like I can wear my favourite leather jacket with my boots. :D 

And we can eat more sweets, haha. :D No more bikini style. So I brought You now some no-bake dessert. It's easy to make and great to taste! :)

Cottage cheese Pancakes with Berries

I came back from my one-week-long holiday just recently, although this pancake was born before that. (Just the hectic packing, organizing, and excitement took all my time. I hope You can forgive me, to post this so late) :)

Peachy Cottage cheese Pie


Did You have an important moment in Your life that counted a lot? I'm sure You did. Like graduation, the moment you decided where to study, the day of your marriage, or when You won the lottery. :D Ok, that's not so common. :) So, I'm speaking of life changing moments... For me these times like that. 

 I'm nearly at the end of my BSc studies, and an internship is waiting for me to do, starting from this summer. The question is just, where? I'm going to interviews, these times, I hope I made the right impressions on them. :) But it's just so exciting, please cheer for me, I really want to be the chosen one. (not like Harry Potter :D )

I need some comfort food, when I'm nervous, so this pie was one of them. :) It was really delicious, springy, light some.

Cottage cheese strudel



Lovely, isn't it? :) Cottage cheese (or quark, or curd cheese) strudel is one of the Hungarian specialties, and I  can say it's worth to try out! :)

It's strange that I haven't done a strudel before, because we ate a lot (of course, not home-made ones) but in  confectionaries, and in special strudel-houses. For example there is a very unique strudel house in the most popular hiking area of Budapest, in 'Normafa', which is on a small mountain , and where you have a panormic view over the city. :) Oh , my family loves that place, the pounds we lost during hiking, we gain it back double times with those strudels. :D 

But this strudel I made was delicious, too. Give it a try! :)

Snowballs



Awh.. Sweet snowballs, a quick dessert without baking or cooking. 

And such fun, to create little snowmen, too! :) Do you like snow?

Personally I love it when it falls, and it's great joy to go out and play with it and  with friends. Too bad I have only one week left of my 'after exams holiday' and the weather isn't snowy...  While I wasn't sledging I created this snowy dessert. Check it out! ;)

This is one of the Hungarian specialities, a  very common cake here. I don't know, whether You know this cake or not. Do You? :)
I learnt the recipe during my cooking lessons in the University. I made it many times since then, too. :)

Stuffed Golden apples


As winter comes, we need to take cear of ourselves more attentive, like we should eat more fruits, to get more vitamine C-s. Therefore, I made this dessert for my Granny's birthday instead of the usual cake. Fortunately she liked it. :)
