Cream Bun - Képviselő fánk (Congressmen Bun)

Hi Dears!
Today I brought another popular Hungarian confection that we call "Képviselő fánk", which means Congressmen Bun.
To be honest I didn't really care why it had its unusual name for a bakery product, we just call it like that, no big deal.
But as I am writing this recipe for you now, I looked it up, and I found the explanation. This product became popular in the 19th century, when café houses were common, and people could afford to buy confections on a daily basis. Even the buffets had cakes and these creamy bakery products in their variety, and according to the legend, this was the most popular bun among the congressmen in the buffet of the House of Parliament.
Now I wonder what is the menu there, if there are any buffets today... :)

Ingredients:
for the bun:

  • 200 g of oil
  • 200 g of flour
  • 200 g of water
  • 5 g of salt
  • 5 g of sugar
  • 6-8 eggs (depends)
for the cream:

  • 1 l milk
  • 6 egg yolks
  • 300 g of sugar
  • 70 g of flour
  • 70 g of vanilla pudding powder
  • 20 g of vanilla sugar
  • 6 egg whites

for the whipped cream:
  • 5 dl of cream
  • 50 g of powdered sugar
  • 10 g of gelatin

for decoration (200 g of sugar - caramelized, and almond on the top) - I skipped it

Preparation:
1. Pour the oil the water together and boil the mixture up with the salt and the sugar.
2. When it boiled up, add the flour, and stir it continuously for at least 5 minutes.
3. Put the mixture in a mixer and mix it, and add 1 by 1 the eggs to it. You will need at least 6 eggs, or more, until the mixture reach a slowly-flowing consistency.

4. Put the mixture in a decorating bag, and make 5-6 cm wide hemispheres on a papered baking tray.

5. Preheat the oven to 210 degree Celsius.
6. Sprinkle the tray with water, or if you have a steamy oven use that option.
7. Bake the buns for about 12-15 minutes, until the bun's surface become completely firm.

8. (Now if you would like to decorate the top of the buns, you can caramelize sugar, dip the top of the buns into it, and sprinkle them with sliced almond )
9. For the vanilla cream: Boil the 3/4 of the milk, and add all the ingredients to the rest of the milk, except the egg whites. When the milk boiled up, carefully mix the two mixtures together, and boil them while stirring, until it gets thick.

10. Whisk the egg whites with a little sugar hard.
11. Gently stir the egg foam in the vanilla cream.
12. Cut the upper 1/3 of the buns off, and fill them with the vanilla cream, using a decorating bag.

13. Whip the cream, with powdered sugar. Add a little water to the gelatine, wait 5 minutes, and heat it up a bit until it gets liquid, and stir it in the whipped cream.
14. Fill the buns with the whipped cream, too, and put their "hats" back on.

Enjoy! :)
xoxo: Hajni
