Chocolate Cupcakes

 I think I am not the only one who just LOVES chocolate, so I created something delish, for us! :D

Well if You are on a diet, and you're still reading it, I can't help. You will break your rules. :D 
This cupcake is definitely worth it, (or the plus 20 minutes of sport ;)) 

Chocolate Cupcakes with Chocolate and Peanut butter frosting :)
Ingredients: (for 24 cupcakes)
   for the cupcakes:
  • 3 eggs
  • 200 g = 4/5 cups of sugar
  • 250 g= 1 cup of flour
  • 2 dl= 7 fl. oz. of milk
  • 0,5 dl= 1/5 cup= 1.6 fl. oz of oil
  • 2 tbsp of cocoa
  • 1 tbsp of rum flavor (if You like it)
  • 2 tbsp of baking powder
  • half bar of dark chocolate /melted/ (I used 85% of cacao contained)
  • 100 g= 2/5 cup of biscuit crumbs (You can replace it with flour, or with crushed biscuits)
  • half bar of dark chocolate /in little pieces/
   for the frosting:
  • 120 g = 1/2 cup of butter/margarine
  • 80 g = 1/3 cup of icing sugar
  • 2 tbsp of cocoa
  • 2 tbsp of peanut butter
  • a bar of dark chocolate /melted/
  • + chocolate and biscuit decoration
1. Mix all the ingredients of the muffin base. (Firstly the eggs with the sugar, then with the rest of them, except the chocolate pieces. Mix them with a spatula, not with a mixer! This way, your muffins will be higher. :) ) 

2. Put muffin/cupcake liners to the muffin tray, and fill each with a big tablespoon of pastry. They should be half empty. :)

3. Put some chocolate pieces onto them. ;)

4. Preheat the oven to 200 degree C. And place bake them for about 35-40 minutes, on a lower degree (160-170 degree C)

5. With a mixer, mix the ingredients of the frosting. 

6. When the muffins are ready, make beautiful cupcakes, with the frosting, and if You feel like , You can decorate them with biscuits, wafer sticks, chocolate, etc... :)

I hope You like them. :D It was a great way to relax a bit after my exam. :)
