Vanilla baskets with pomegranate

Hello!
How are You? I feel  really sad these days, but as I have a lot desserts from last week, I came to share it. It makes me busy and cheers me up a bit.
Like these vanilla baskets, the inspiration came from the famous Creme brulée-s. 
The basket is made of cookie pastry, in the middle there is vanilla cream, on the top a tablespoon of baked egg white foam, and of course pomegranates. 




Ingredients:

  • 150 g = 10 tbsp of melted margarine
  • 2 egg yolks
  • 200 g = 13 tbsp of sugar
  • 300 g = 1 + 1/4 cup of flour
  • 1 tsp of cinnamon
  • ----
  • 3 dl= 1 +1/4 cup of milk
  • 4 tbsp of sugar
  • 1 package of vanilla pudding
  • ----
  • 2 tbsp of sugar
  • 2 egg whites  

Preparation: 
1. Mix the ingredients in the upper column, to get a pastry ball.

2. Then roll it out, and cut 24 circles from it. 

3. Sprinkle a little flour to muffin bakers, and push the pastry circles into them.

4. Preheat the oven to 200 degree Celsius. 

5. Bake the baskets for about 15-20 minutes.

6. Until then, You can make the vanilla cream. Mix the milk with the pudding and the sugar, and heat it on the oven. Stir it with an egg-beater.

7. When the baskets are ready, fill them with vanilla cream.

8. Whisk the egg whites with 2 tbsp of sugar. When it's really thick, spoon it on the top of the baskets, then bake it for about 3 minutes. 

9. You can decorate it with pomegranate, if You wish. I really liked it this way. :)
