Mole-hill cake with fondant

Hi Dears! :) 
Feeling good? I'm really fine, as I nearly finished my diploma work. /the clever ending is missing, but I think in another off day from work I can do that as well/ :D Yay! 
Recently my boyfriend celebrated his birthday, and this cake was my creation for him.
To be honest it wasn't intended to be a Mole-hill cake, haha, but as the pot-cake didn't come out nicely after it was baked, I decided to change the form of the cake... 
So this mole-hill cake happened, which I think is even more fun than a regular. 
I covered it with home-made fondant. It should represent a half apple, but my boyfriend thought it was a cherry, so... Whatever You think it is. :D
Ingredients:

  • 6 eggs (whites and yolks separately)
  • 1 tbsp of vanilla sugar
  • 3 tsp of sugar
  • ---
  • 300 g = 1 + 1/4 cup of sugar
  • 150 g = 10 tbsp of melted margarine
  • 350 g= 1 + 1/2 cup of flour
  • 2 tbsp of baking powder
  • 1 cup of milk
  • 1/3 cup of oil
  • 5 tsp of cocoa
  • 1 little cup of espresso coffee
  • 3 tsp of vanilla flavor
  • ---
  • 500 g = 2 cups of icing/powdered sugar
  • 1 tbsp of honey
  • 2 tbsp of gelatin
  • 3 tbsp of water
  • 1 tbsp of melted margarine
  • 1 tsp of red / green food color
  • ---
  • 500 g = 2 cups of sweetened sour cream
  • 1 bar of dark chocolate (100 g)
  • 3 tbsp of cocoa
  • 3 tbsp of instant cappuccino  

Preparation:
1. Whisk the egg whites with the vanilla sugar, and with 3 tsp of sugar to get a though foam.

2. Mix the yolks with the sugar and the margarine. Then add the rest of the ingredients of the brown column. 

3. Gently add the egg foam to it. 

4. Lubricate a cake form with margarine, sprinkle a little flour on it, and pour the batter inside.

5. In a preheated oven, bake the cake for about 45 minutes on 180 degree Celsius.

6. Until then, we can make the fondant. Heat up the gelatin with 3 tbsp of water, as You stir it without stopping. Then add it to the sugar. Add the honey and the melted margarine as well, and knead it well. 

7. Then separate a small amount of it to a smaller bowl. Add the green colour to it, and the red to the bigger amount. Mix them one by one.


8. Then cover them with foil, and put them to the fridge.

9. For the creams I made a chocolaty foam, and a cappuccino foam. For that, You should whisk the sour cream. (If it's not sweetened, you should add 2 tbsp of sugar to it.) 

10. Then separate it to 2 bowls. Melt the chocolate and with the cocoa add it to one of the bowl of sour cream. And mix them.
Add cappuccino powder/ instant cappuccino to the other.



11. When the sponge of the cake is ready. Cut some pieces of it. 

12. Grab a cake form, and put these pieces on the bottom.

13. Lubricate a little cream on it. 

14. Make crumble of the rest of the cake. (That's why it is called mole-hill). 




With Your palms, push some of it to the cream. Then repeat this method, until You run out of cream. You should cover the whole cake with the crumble. With Your hands You can create the 'hill' form with a little pressure. 


15. Then You can cover it with fondant if You wish, but without it, this cake looks fine, and fun, too. :) 
So roll out the pink fondant , on a little icing sugar on a wooden plate. Then gently cover with it the cake. Smooth it with Your palm onto the cake. 


16. With the green fondant You can prepare the leaves. And I also decorated them, with melted chocolate.
