Sacher Cake with apricots


Hello Summer! :) 

I wake up on the first morning of summer with a great smile on my face every year. I just love this season, and even if the weather is not so sunny, it always starts with a great happening, as my Mother's Name Day is on the 1th of June. 

This year she wanted me to bake her a Sacher cake, so this yummy cake needed to happen. :D 
This time I searched the original recipe from Vienna, and followed that, with a little change as I decorated it with apricots.
The cake is seriously yummy, with a lot of chocolate inside, it's worth to try! :D


Ingredients:
  • 2 bars of dark chocolate
  • 200 g= 4/5 cup of margarine/butter
  • 200 g= 4/5 cup of granulated sugar
  • 100 g= 2/5 cup of icing sugar
  • 200 g= 4/5 cup of flour
  • 8 eggs (separated)
  • 1 tbsp of vanilla sugar
  • 2 tbsp of cocoa
  • 1 tbsp of baking powder
  • 2 tbsp of rum (or rum extract)
  • ----
  • 1 bar of chocolate (dark)
  • jam (apricots/peaches)
  • 1 tsp of oil
  • apricots 

Preparation:

1. Mix the melted margarine, with the melted chocolate, the rum and the sugar. 
2. Break the eggs, and add the yolks, one by one to the batter.

3. Mix the flour , baking powder, cocoa and the icing sugar. Then add them to the batter.

4. Whisk the egg whites with a little vanilla sugar. Then add it carefully to the batter.

5. Lubricate a circle shaped mold with butter and flour.
6. Fill it with the pastry.

7. Preheat the oven to 200 degree Celsius.
8. Bake the pastry in 40-45 minutes on 180' C.

9. Wash the apricots, peel them, and cut them to pieces, as You like.

10. When the sponge is ready, cut it to 3 parts horizontally.

11. Fill them with jam, on the sides, and on the top, too.

12. Then lubricate some melted chocolate on the top.  (It will be more easy to lubricate , if you add a teaspoon of oil to it, or a little milk)

13. Decorate it with the apricots. 

Then put it to the fridge. Next day it will be gorgeous! :)
