I baked these beauties at home, so Brioches, and Sweet Bread baking project was ON (that I learnt in school).
There are two kinds of shapes for the brioches, this one, and the roll form. Usually, the roll is sprinkled with sugar, and the sweet bread type is smooth, but as my family has really sweet teethe, it was not a question to sprinkle the rest, or not... :)
And as the dough is same for sweet bread, I baked them both.
Ingredients:
- 500 g = 2 cups of flour
- 50 g = 1/5 cup of margarine
- 100 g = 2/5 cup of powdered sugar
- 25 g of yeast
- 10 g = 1 tsp of salt
- 10 g of vanilla sugar
- 1 grated lemon peel
- 2 egg yolks
- 2,5 dl = 1 cup of milk
- ---
- 1 egg
- cocoa
- cinnamon
- sugar
Preparation:
1. Heat up the milk. Then add the yeast with a tablespoon of sugar, and with 2-3 tbsp of flour to it, and wait till it activates.
2. Work together the flour with the margarine, then add the rest of the sugar (both kinds), add the yolks, the salt, and grate the peel of a washed lemon to the mixture.
3. Then pour the milky yeast in the middle, and knead the dough. (You can do it by hand, but it is easier to use a bread-baker / kneader machine.
4. When the dough is like a ball, place it to a warm place (40 degree C max), and wait for about 40 minutes to let it rise.
5. Then knead it again, give it some air, and wait again for about 15-20 minutes.
6. Then separate little dough-balls, roll them a bit, and with two rolls braid it, like in the picture. The method is always the same, with the sweet bread as well, start with the upper roll, pull it down, and its neighbor on the left hand side comes up on it, then the remainder on the left comes under the roll on the left next. The dough-rolls always cross only one roll at a time.
7. Then work together the upper and the lower side of the braided dough, so a little ball will be created, and place it on a baking tin.
8. With the sweet bread do the same, just with more pastry. I rolled out one of the roll and placed cocoa in it. Then I rolled it up and made the same braid.
9. Lubricate them with an egg, then sprinkle it with sugar. (I mixed it with cinnamon as well)
10. In a preheated oven bake them for about 20-25 minutes on 180 degree C.
It was super tasty, but it is the best on the day it was baked.Enjoy!
