Christmas whoopie cookie


Merry Christmas Eve to You! :)
Today I brought a nice Christmas stocking filling cookie idea. 
It's tastes so Christmas-y, as it contains all the great spices and ingredients, that we use during the Holidays. Some examples: cinnamon, gingerbread spice mix, grounded walnut, candied orange peel, cocoa, caramel....Yum! :)
When You are ready, you can pack them nicely in a little bag, with more cookies, gingerbread, anything You like, like I did... 



Ingredients:

  • 150 g = 3/5 cup of sugar
  • 150 g = 3/5 cup of margarine/butter
  • 250 g = 1 cup of flour
  • 2 eggs
  • 1 tbsp of vanilla sugar
  • grated peel of an orange
  • a pinch of salt
  • 5 tbsp of grounded walnut
  • 1 tbsp of cinnamon
  • 1 tbsp of cocoa
  • 1 tbsp of gingerbread spice (or cinnamon)
  • 1 tbsp of baking powder
  • ---
  • 1 bar of (melted) chocolate, and candied orange peel for decoration

Preparation:

1. Heat up the sugar, let it caramelize. You should stir it a bit. When it melted add a little bit of the margarine / butter to it.


2. Here comes the easy part, knead together all the ingredients. :) 
If you have a kneading machine, then it's even easier. If You don't, I would recommend to start with mixing the margarine with the flour with the baking powder , then pour the caramel to it, and add the eggs.  Lastly add all the extra ingredients. Knead a dough ball.


3. Then separate little handy balls and place them on a baking tray, which is covered with baking paper.

4. With your fingers, push the balls a bit down.
5. In a preheated oven, bake them for about 12 minutes on 180 degree C.
6. When the cookies are ready, above steam melt the chocolate. 
7. When the chocolate is warmer than your hand (40 C) and it melted completely, it's ready. Than use a bag, or fold a paper bag from baking paper, and fill it with the chocolate.
8. Make streaks with it on the cookies. (I used white chocolate as well)

9. If you like candied orange peel you can glue them on with more chocolate.



10. Then let them dry, and you are ready to serve it. :) Enjoy!
