Coconut muffins


These little sweet muffins are so delicious! And easy  to make. :) As easy, that I baked it right after waking up, half asleep. I just wanted to bake something for my sweetheart for our one-day-long trip to the mountains. The trip was awesome, Budapest is really pretty when it's snowy, and the muffins were tasty, too. Great combination! :)



Ingredients:
  • 135 grammes biscuit powder/ crushed biscuits/cookie crumb crust  = 5 oz = 0,3 lb
  • 50 g icing sugar = 2 oz = 0,1 lb
  • 2 eggs
  • 1,5 dl milk = 5,1 fl ozs = 0,3 pints
  • 1 tbsp baking powder
  • 2 tbsp vanilla sugar
  • 1 tbsp rum flavor
  • 4 tbsp granulated sugar
  • 4 tbsp dessicated coconut
  • 0,5 dl oil = 1,7 fl oz = 0,1 pints

Preparation:

1.  Mix together all the ingredients.


2. Thoroughly grease and flour a muffin pan (or use paper muffin liners).
3. Fill them, with the pastry.

4. Bake them for about 40 minutes 150' C (low degree) = 300' F
